Whitebait Roll


  • 1 cup flour
  • 50g butter
  • 1 small onion, finely chopped
  • 1 teaspoon baking powder
  • Salt and freshly ground black pepper
  • 1 cup mashed potato
  • 1 egg


  1. Preheat oven to 170C.
  2. Mix together flour, potato, baking powder, melted butter and beaten egg.
  3. Roll out on a lightly floured board and cover with the whitebait.
  4. Sprinkle with the chopped onion and seasonings.
  5. Roll up and bake for an hour.

Serve sliced either hot or cold.
