Whitebait Souffle

A whitebait souffle recipe from the 1946 NZ Truth cookery book.

Ingredients

  • 1 breakfast cup of milk
  • 1 tbsp butter
  • 2 eggs
  • Half pint of whitebait
  • 1 slice bread
  • Pepper and salt

Method

  1. Soak bread in milk.
  2. Add butter and beat to a pulp.
  3. Add egg yolks, pepper and salt.
  4. Add whites beaten stiffly.
  5. Pour into buttered dish.
  6. Bake 20 minutes in a hot oven.
