Whitebait Deauville

Ingredients

  • ¼ cup whitebait
  • 1 tablespoon flour
  • ¼ teaspoon salt & pepper
  • 25 grams butter
  • lemon wedge

Method

  1. Drain the whitebait and place in a bowl.
  2. Sprinkle with flour, salt and pepper.
  3. Heat butter in a small frying pan.
  4. Add whitebait all at once and cook turning constantly for about 1 minute.

Pile onto a warm plate, and serve with a lemon wedge.
Serves 1.
