- ¼ cup whitebait
- 1 tablespoon flour
- ¼ teaspoon salt & pepper
- 25 grams butter
- lemon wedge
- Drain the whitebait and place in a bowl.
- Sprinkle with flour, salt and pepper.
- Heat butter in a small frying pan.
- Add whitebait all at once and cook turning constantly for about 1 minute.
Pile onto a warm plate, and serve with a lemon wedge.
